Dominican SANCOCHO
Sancocho is a typical Dominican dish whose recipe is kept by every family as a gem. The really original sancocho is prepared from 7 kinds of meat (beef, pork, chicken, goat, sausage, smoked meat and pork rib). Vegetables added to this dish – platano (green banana), carrot, corn, potato, batata (sweet potato), cabbage, tomato, avocado or beetroot and onion with garlic. Spices which are added are pepper, salt, coriander, celery, oregano and lemon juice. Everything is cooked together in one pot.
Simple recipe for Sancocho:
1/2 kg of beef
1 big onion
200 g of pork shoulder
1 smaller beetroot
salt
1/2 celery
pepper
1 medium-sized potatoes
about 300 g of white cabbage
2 bigger tomatoes
a bunch of beans
Cut the meat into cubes. Put the beef into a bigger casserole. Pour the meat with salted water and cook. Then add the pork meat and cook about 20 minutes.
Cut vegetables to the slices, the beans to the strips, and put everything including the cut onion into the casserole.
After five minutes, add peeled and quartered tomatoes. Cook for few minutes.
